She loves making (and eating) ebelskivers. Yesterday morning she wanted to make them all by herself so I helped her a little but she did most of it.
Earlier this year I found blueberry sour cream pancake mix on sale at King Arthur and I bought several boxes and kept it in the freezer. I can make half of the recipe and we’ll use half one day, put the rest in the fridge and fix it the next morning. That used to work but now that she’s become such a big eater, it doesn’t work so well.
That much mix makes nine ebelskivers. Last time we made them, we each ate three and during the day, she’d go back and get one til they were all gone.
Yesterday I put four on each of our plates. She ate her four, went back and couldn’t believe there was only one left. She ate that one and I still had one on my plate and she was eyeballing it so I asked if she wanted it. She said “If you don’t want it!” I told her she could have it so she ate six and said “I think we need a bigger recipe!
She’s a bit of a picky eater but give her something she likes and there’d better be plenty of it.
